John Alexander’s 4 hectare farm is planted 100% with this unique variety, called Chiroso. Chiroso often expresses complex floral and tea flavors, and clean fruited notes. His farm, “Las Estrellas”, produces fully-washed coffee, a small pulper being used to remove the cherry, fermenting with water, and then drying on a raised bed that has a top which slides on and off depending on weather (they call these “carros”, or “cars” because of the convertible top). This coffee was purchased through a newer buying operation in Urrao. It’s a relatively short distance between Medellin and Urrao which puts them in convenient proximity to manage buying during the harvest seasons. It doesn’t hurt that one of them (Leonardo Henao – Finca Los Palomos) has a farm in the region, uniquely positioning him within the Urrao farming community.
